Directions

1. To make the no-bake cookies: In a large saucepan or high-sided chef pan, add butter, sugar, milk, and cocoa powder. Allow the ingredients to melt together and bring to a rolling boil, then allow to simmer for 1 minute before removing from heat.

2. Add in peanut butter and vanilla extract and whisk until smooth and combined.

3. Add in oats and stir with a wooden spoon, until fully covered and coated.

4. Lay down a piece of parchment paper on a baking sheet and scoop about 2 heaping tablespoonfuls into mounds on parchment paper and allow to sit for about 20 minutes. Once the no-bake cookies are set and no longer warm, you can enjoy them! ❤️

Tips for the no-bake cookies recipe

  • We use quick-cooking oats for this recipe but you can swap out old-fashioned oats if you like, the only difference is texture and size.
  • Make sure you do not simmer the peanut butter, sugar-milk-butter-cocoa mixture for longer than one minute.
  • You can use an ice cream scoop filled about 3/4 the way full to measure out these cookies. This recipe makes about 24 cookies, you can make a smaller or larger batch if you like using different cookie scoops.

How and how long to store the no-bake cookies?

These no-bake cookies with peanut butter, cocoa, and oatmeal should keep for about 3 weeks sealed in an air-tight container. Layers of cookies should be separated by a piece of parchment paper.

How to freeze the no-bake cookies

For best results, make sure the no-bake cookies are completely cooled down. Then place in an air-tight container using pieces of parchment paper to separate the layers. You can also use gallon-sized Ziploc bags as well. The no-bake cookies can be frozen for about 3 months.
